Sundried Tomato and Garlic Baked Brie

For my first post I thought I would start off with something easy, quick, and delicious. This is a recipe my mom gave me and was a staple at all her dinner parties for as long as I can remember. Baked Brie is one of my favorites - you can make minor changes to your recipe and have a completely new dish. Plus, who doesn't love ooey gooey cheese on a fresh whole wheat baguette? Frankly, if you don't, I don't know that we can be friends. I usually use Jalapeno jelly but this time I thought I would try something a bit more savory. Enter Sundried Tomato and Garlic. Here is what you need:

Cheese
 - 1 Wheel of triple cream Brie cheese
 - 3 cloves of garlic (chopped)
 - 2 tbsp of Sundried Tomatoes
 - 1/2 tsp. Fresh ground black pepper

Baguette
 - 1 Whole Wheat Baguette
 - 1/2 tbsp of butter
 - 1 clove of garlic

Remove the rind from the cheese and cut it into cubes. Mix the chesse together with all of the ingredients in a bowl and bake at 350 degrees until the cheese is bubbling. Remove from the oven and whisk with a fork.

While the cheese is baking cut a whole wheat baguette into 1 inch sections and place them onto a baking sheet. Melt the butter and press in a clove of garlic - then whisk. Brush the baguette with the butter and garlic mixture and then place in the oven with the cheese until toasted. Serve.

Let me tell you this one will be a hit! I had my friend Hana over for a TV night when I made this and we polished it off in a matter of minutes.

Given  that this was my first entry and we were 1/2 way through a bottle of Chianti- I forgot to take a picture so I have included some examples below of what it should look like. Let me know what you guys think!
